  • 4 medium parsnips, diced
  • 4 medium carrots, diced
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tsp spirulina powder
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Saut? chopped onion until soft and translucent (about 5 minutes).
  2. Add minced garlic and cook for another minute until fragrant. Stir in diced parsnips and carrots; cook for about 10 minutes until softened.
  3. Pour in vegetable broth; bring to a boil then reduce to simmer for about 20 minutes until vegetables are tender.
  4. Remove from heat and blend the soup using an immersion blender until smooth. If using a traditional blender, let cool slightly before blending.
  5. Return blended soup to low heat and stir in coconut milk and spirulina powder; season to taste with salt and pepper. Warm through for an additional 5 minutes.
  6. Serve hot, garnished with fresh herbs if desired.
