- 3 tablespoons extra virgin olive oil

- Preheat your oven to 400?F (200?C).
- In a large bowl, combine the cubed beets and butternut squash. Drizzle with olive oil and season with salt, pepper, and fresh herbs. Toss until evenly coated.
- Spread the veggies on a baking sheet lined with parchment paper. Roast for 25-30 minutes until tender and caramelized.
