Description

Ingredients

– 1 cup fresh pumpkin puree

– 1 cup all-purpose flour

– 3/4 cup granulated sugar

– 3 large eggs

– 1 tsp baking powder

– 1 tsp ground cinnamon

– 1/2 tsp ground ginger

– 1/4 tsp ground cloves

– 4 tbsp unsalted butter (melted)

– 8 oz cream cheese (softened)

– 2 cups powdered sugar


Instructions

1. Preheat oven to 350?F (175?C) and line a jelly-roll pan with parchment paper.

2. In one bowl, whisk together flour, sugar, baking powder, spices, and salt. In another bowl, beat eggs and mix in melted butter and pumpkin puree.

3. Combine the wet and dry ingredients gently until just mixed.

4. Pour batter into the prepared pan and bake for about 15 minutes or until golden brown.

5. Allow the cake to cool slightly before rolling it up with a dusted towel to maintain shape.

6. Prepare the filling by mixing cream cheese with powdered sugar until smooth; spread over the cooled cake before rolling it back up.

Notes

– For added flavor, drizzle caramel sauce over the top before serving.

– You can substitute pumpkin puree with sweet potato for a different taste.
