Ingredients

Scale

1/4 cup extra virgin olive oil

1/3 cup fresh lemon juice (from about 2 lemons)

3 cloves garlic (minced)

2 tablespoons fresh oregano (or 1 tablespoon dried)

1 cup plain yogurt

1 teaspoon salt

1/2 teaspoon black pepper

Instructions

In a medium bowl, combine olive oil, lemon juice, minced garlic, oregano, yogurt, salt, and pepper. Whisk until well blended.

Place chicken in a resealable bag or shallow dish and pour half of the marinade over it. Seal tightly and massage to coat evenly; refrigerate for at least 1 hour (up to overnight for best results).

Preheat grill or oven to medium-high heat (about 400?F). Remove chicken from marinade, shaking off excess. Grill for about 5-7 minutes per side or until the internal temperature reaches 165?F.

Let rest briefly before serving.

Notes

For added flavor variations, experiment with herbs like thyme or dill.

This marinade also works well with lamb or fish.
