  • 2 lbs fresh spinach
  • 400 g paneer, cubed
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 thumb-sized piece fresh ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • ? cup cream or yogurt
  • Salt and pepper to taste

Instructions

  1. Wash the spinach thoroughly and chop coarsely. Blanch in boiling water for 2 minutes, then transfer to ice water to retain color.
  2. Blend cooled spinach with ginger and garlic until smooth.
  3. Heat oil in a pan over medium heat; add cumin seeds until they sizzle. Add onions and saut? until golden brown.
  4. Stir in the blended spinach mixture along with coriander powder, salt, and pepper. Simmer for 5 minutes.
  5. Add cubed paneer to the pan and cook for an additional 5 minutes until heated through.
  6. Stir in cream or yogurt until creamy. Adjust seasoning if needed before serving.
