Instructions
- Rinse quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water or vegetable broth. Bring to boil, reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed.
- Preheat oven to 400?F (200?C). Slice nectarines in half, remove pits, and place cut-side up on a baking sheet lined with parchment paper. Drizzle with olive oil and honey, then roast for 20 minutes until tender.
