- 8 corn tortillas
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup bell peppers, chopped (mix of red, yellow, and green)
- 1/2 red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 2 tsp olive oil
Instructions
- Prepare all veggies: wash and chop the bell peppers and avocado; slice the red onion. Drain and rinse black beans.
- Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side. Keep them wrapped in a clean towel.
- In the same skillet, add olive oil and saut? the onion and bell peppers until softened (about 5 minutes). Season with salt and pepper.
- Add black beans to the skillet and cook until heated through (approximately 3 minutes).
- Assemble each taco by filling warm tortillas with the veggie-bean mixture. Top with avocado slices, fresh cilantro, and a squeeze of lime juice.
- Serve immediately for maximum flavor.
