Ingredients

  • 1 cup fresh green beans (trimmed)
  • 1 cup cherry tomatoes (halved)
  • 2 hard-boiled eggs (quartered)
  • 1 can (5 oz) quality canned tuna (drained)
  • 1/4 cup green olives (sliced)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash the green beans and halve the cherry tomatoes.
  2. Blanch the green beans in boiling salted water for 3-4 minutes until bright green and tender-crisp. Drain and cool in an ice bath.
  3. In a large bowl, combine drained tuna, cherry tomatoes, blanched green beans, olives, and egg quarters; gently toss.
  4. In a small bowl, whisk together olive oil and lemon juice; drizzle over the salad while tossing lightly.
  5. Season with salt and pepper according to taste before serving.
