  • 1 cup coconut flakes (sweetened or unsweetened)
  • 1/2 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 2 tablespoons coconut milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine eggs, coconut milk, vanilla extract, and melted butter.
  4. Gradually mix wet ingredients into dry ingredients until just combined; fold in coconut flakes.
  5. Pour batter evenly into prepared pans and bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  6. Cool in pans for ten minutes before transferring to wire racks to cool completely.
  7. Frost with a mixture of softened butter, powdered sugar, and coconut milk once cooled.
